 Wild ramps peaking through the brown winter blanket of leaves

 

Fact: Wild Leeks are one of the first plants to come up in the spring. Often found in maple and mixed-wood forests, they are widely considered a delicacy.

Ingredients

4 cups wild ramps (when you harvest you shoulf leave the bulbs so they will come back the next year) clean and chop in to 1/4 inch slices

4 cups red potatoes (peeled and diced)

4 cups chicken broth

2 cups milk

1/4 teaspoon ground white pepper

Makes 6 servings

Directions

Lightly spray medium saucepan . Heat over medium heat and add wild ramps

Cook and stir for 5 minutes

Add broth and potatoes

Bring to boil. Reduce heat to low . Cover and simmer for 30 minutes.

Transfer to blender ( i use an immersion blender)  and process to smooth

Return to sauce pan and add milk and pepper.

If you use skim milk total calories 151 / serving or add cream (I use 5%)
